Fiesta Slaw
Serves 4-6
- 1 C red cabbage
- 1 C white cabbage
- 1 C kale
- 1/2 C raw golden beet
- 1/2 C red bell pepper
- 1/2 C yellow bell pepper
- 1/4 C red onion
- 1/4 C scallions and/or chives
- 1/4 C cilantro
- 1/8 C jalapeno peppers (if you like it hot!), chopped fine
- 1/2 C toasted, salted pepitas
- Sea salt and ground pepper to taste
- 1/2 C Salad Girl Organic Sweet & Sassy + 1/2 C Salad Girl Chile Limon
Chop or shred cabbage. Chop all vegetables and herbs. In mixing bowl, add all ingredients together, add blend of dressings, and combine thoroughly.
