Roasted Potato Salad Nicoise
Serves 6-8
- 2 lbs mixed fingerling potatoes, halved, roasted, and cooled
- 1 C scallions, finely chopped
- 1/4C chives, chopped
- 1 bunch asparagus (tips and centers), sliced bite-size, blanched al dente, and cooled
- 1 C crumbled Chevre
- 1 C wild caught Albacore Tuna, drained
- 1/4 C capers, drained
- 1 C artichoke hearts, drained well
- 1 bag Focaccia Caesar croutons, crumbled
- 2 C heirloom cherry tomatoes, sliced
- Salad Girl Organic Lemony Herb Dressing
To Prepare: Place all ingredients in a large bowl, and gently toss with 1/2 bottle of Salad Girl Lemony Herb. Add more to taste, and refrigerate until ready to serve.
