Ingredients:
- 1 medium sweet potato, peeled & cut 1” pieces
- 1 T extra-virgin olive oil
- 1 tsp each: cumin and Chile powder
- Salt/pepper

Quinoa (we used red quinoa), cooked
- Mango, cubed
- 1 can black beans, rinsed
- Spinach or mixed greens
- Green onions
- Cilantro
- Salad Girl Dude Ranch and Chili Limon Dressings
- Optional: pickled jalapeños
Prepare Salad:
Heat oven to 425. Toss sweet potato with ingredients; put on a foil lined baking sheet. Bake about 20 minutes until tender, crispy. Assemble salad, drizzle with a 50/50 blend of Salad Girl’s Dude Ranch and Chili Limon Dressings.
