Blood Orange Caprese Salad
Makes 4 bowls
- 5 oz Organic Girl Super Greens (1 C per bowl)
- 8 oz pre-cooked Seeds of Change 7 Whole Grains, follow heating instructions and cool
- 1/2 C Green onion, chopped
- 1/2 C Orange bell pepper, chop confetti
- 1/2 C Yellow bell pepper, chop confetti
- 1/2 C Kalamata jumbo pitted olives, sliced in slivers
- 1 C Love Beets Perfectly Pickled
- 3-4 Blood (Moro) oranges, peeled & sliced in little triangle bites
- 1/2 C Feta cheese, crumbled
- 1/2 C Toasted pine nuts
- 1 bottle Salad Girl Citrus Splash, Lemony Herb, or Pomegranate Pear Organic Vinaigrette
To Prepare Salad: In large mixing bowl, gently toss together: Bell peppers, onions, olives & grains. Set aside. Fill four 16 oz. salad bowls with a handful of greens, then evenly divide veggie & grain mixture atop each bed of greens. Decorate with beets, oranges, feta, and pine nuts. Just before serving, drizzle with Salad Girl Organic Vinaigrette.
