Fresh Fig & Minnesota Little Lucy Brie Salad
There are two seasons for domestic fresh figs; the first or "breba" season is the first few weeks in June. The second or "new wood" season typically runs from August through October. I picked up these beauties at my local market that also has one of the best cheese depts. filled with a variety of local bries and Miss Lucy fell into my basket! YUM!
- 5 oz Mixed organic greens
- 6-8 Ripe figs, sliced bite sized
- 1/2 wheel, 3 oz of Minnesota Red Headed Creamery’s Little Lucy brie, frozen & set out 15 min before grating on fresh greens
- 1 1/2 C Pepitas, salted & toasted
- 1/2 C Red onion, thinly sliced
- 1 Bottle Salad Girl Curry & Fig Organic Vinaigrette
To Prepare Salad: Arrange fresh greens upon a pretty salad plate, platter or in a bowl, grate greens with cheese, decorate with sliced figs, sprinkle with pepitas, and just before serving drizzle with Salad Girl Curry & Fig Organic Salad Dressing.
