Roasted Delicata Squash & Cheesy Spinach Tortellini Salad
- 20 oz container mixed cheese & spinach tortellini cooked, drained and cooled.
- 1 delicata squash seeded and sliced in 1/2 moons, salted & peppered & roasted till golden brown-cool
- 1/2 cup roasted pine nuts
- 1 cup of chopped green onions
- 1 cup of chopped basil
- 1 cup Sartori Grated Cheese
- 1 Bottle Salad Girl Organic Lemony Herb Vinaigrette
To Prepare Salad: pour all of the ingredients in a medium bowl, gently fold all of the ingredients together with 1 bottle of Salad Girl Organic Lemony Herb Vinaigrette and keep cool until ready to serve.
