Roasted Delicata Squash Tortellini Salad
- 20 oz Mixed cheese & spinach tortellini, cooked, drained and cooled
- 1 delicata squash seeded and sliced in 1/2 moons, salted & pepper & roasted till golden brown-cool
- 1/2 C roasted pine nuts
- 1 C Green onions, chopped
- 1 C Basil, chopped
- 1 C Sartori Grated Cheese
- 1 Bottle Salad Girl Organic Lemony Herb Vinaigrette
To Prepare Salad: pour all of the ingredients in a medium bowl, gently fold all of the ingredients together with 1 bottle of Salad Girl Organic Lemony Herb Vinaigrette and keep cool until ready to serve.
