A-peeling Sweet Potato & Beet Crisps
Serves 4
Use the peels and the whole sweet potato as well as the whole beet for this recipe.
- 2 good sized organic sweet potatoes, scrubbed, cut in 1/2, trimmed and use veggie peeler to make thin sweet potato chips
- 2 large organic red beets, scrubbed, trimmed and use veggie peeler to make thin beet chips
- Salad Girl Organic Sweet & Sassy Dressing
- Lucky's Hot Sauce
Prepare:
Preheat oven to 375 degrees.
Toss beet and potato peels in bowl with 3 tablespoons organic sunflower oil, pinch of salt, and a pinch of pepper. Line baking sheet with parchment, and spray with organic, non-aerosol, non-stick spray. Spread peels onto sheet pan, and roast 25-30 minutes. Remove from oven, and cool completely before arranging on platter. Serve with our special Buffalo Sauce below.
