Harvest Thyme Slaw
Serves 4-6
- 12 oz bag of broccoli slaw
- 2 cups fine chopped kale
- 2 raw golden beets, large grate (optional and pretty)
- 1/2 Tbsp fresh thyme leaves
- 1 C pumpkin seeds, roasted and salted
- 1 C currants
- 1/2 cup dried blueberries
- 1 C dried cranberries
- 1/2 C dried mango or apricots, snipped
- Salad Girl Organic Sweet & Sassy Dressing
To Prepare Slaw:
Mix all ingredients together. Can be made several hours before serving. Garnish with fresh thyme sprig and snippets of dried mango or apricots.
Optional: Right before serving, add chopped apples or pears.
