Fresh Organic Watemelon & Grilled Chicken Salad w/ Lemony Herb...
Simple Summer Suppers are a necessity in my household, especially at the end of some of these hot, humid Summer days. I am an open-windows-in-the-Summertime kind of gal and If I lived alone, I wouldn't even turn on a burner. But since I am still blessed with the company of my husband and often a Grandchild or two for dinner, I will bear the hardship of boiling a bit of pasta or another grain, but I make sure to double my recipe for use later in the week!
I have a really picky meat eater in the Salad Girl household that won't eat leftovers, so I found a few nifty ways to disguise leftovers and to save energy (both mine and the planets) and I have started to list some of my ideas below. Enjoy
1. When I have to use the stove to cook up some grains (rice,quinoa,wild rice,or a pasta) as a side dish for meals, I simply double the recipe each time and then use the extra grains later in the week as an entree salad recipe ie: fresh veggie pasta salad, sushi rice salad...
2. When grilling meats, poultry or fish, I grill extra for a main dish salad like the one above!
3. I love healthy grab & go protein items that are pre grilled or ready roasted by my local market! This is a great way to keep my picky meat eater very happy!
