Gingered Asian Stone Fruit and Chicken Slaw
- Serves 6-8
- 4 C roasting or grilled chicken, cubed
- 3 fresh firm yet ripe peaches, cut bite size
- 1/2 C petite red onions or scallions, chopped
- 2 C sugar snap peas, cut diagonally
- 1 Tbsp toasted black sesame seeds
- 1 C crumbled roasted and salted almonds or cashews
- 1 Tbsp fresh ginger, finely grated
- 4 C slaw mix (chopped or grated red & white cabbage, chard, nappa , kale, carrots...)
- 3/4 C Salad Girl Sweet & Sassy Organic Dressing (add more if desired) and 2 Tbsp Salad Girl Toasted Sesame & Ginger Vinaigrette (optional for the toasted sesame oil flavor)
- Salt and pepper to taste
To Prepare Slaw: Mix all above ingredients together. Serve with fresh baguette or enjoy in a lettuce or tortilla wrap.
