Surrender Salmon Tacos
Makes 4-6 tacos
- 2 C Surrender Salmon, grilled
- 1 C avocado, cubed
- 1-2 C Honey Mango, chopped
- 1 C scallions, finely chopped
- 1/2 C cilantro, finely chopped
- 1/2 lime, sliced
- 2-4 oz microgreens
- 1 C Cojita cheese, finely shredded
- 4-6 taco shells
- 1/4 C Salad Girl Organic Chili Limon Vinaigrette
To Prepare Tacos: Place the first 5 ingredients in a mixing bowl and gently fold in Salad Girl Chili Limon (add more to taste). Fill taco shells with microgreens, Cojita cheese, and grilled salmon mixture. Squeeze with fresh lime.
