Strawberry & Honey Mango Salad
Serves 8-10
- 5-7 oz Spring Mix Baby Greens
- 4 ripe Honey Mangos, peeled and cut into cubes
- 16 sliced ripe strawberries
- 3 cups sugar snap peas cut into 1 inch diagonal bites (save 6-8 sugar snaps to slice down center for garnish)
- 1 cup Parmesan cheese ribbons
- 1 cup crumbled roasted almonds
- Salad Girl Organic Pomegranate Pear Vinaigrette
To Prepare Salad
Arrange Spring Baby Greens on a salad platter or plate, sprinkle with crumbled almonds, sugar snaps, and mangoes. Decorate with ribbons of cheese and strawberries. Garnish with extra sugar snap peas sliced lengthwise, and just before serving, drizzle with Salad Girl Organic Pomegranate Pear.
